Coffee Cake Muffins

Better Than Good Snacks created another recipe just for you!

Coffee Cake Muffins with Salted Caramel Snacks! This sweet treat is a perfect go to snack for kids and parents alike! This whole recipe is quick and easy and is 35 min from prep time to finish. The coffee cake muffin is a keto snack and diabetic friendly due to the use of monk fruit instead of white sugar and almond flour instead of traditional. These muffins will keep you satisfied all the time without the fear of breaking your diet!



Almond Flour

1 Cup

Lakanto Monk fruit (

1/2 Cup

Unsalted Butter

1/4 Cup & 1/2 Cup (Melt & Divide)

Baking Powder

1 teaspoon


1 teaspoon

Vanilla Extract

1/4 teaspoon


2 Large

salted caramel flavored Better Than Good Snacks protein puffs

1/4 cup (crushed fine)


Instructions for coffee cake muffins :

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line your muffin tin with 9 muffin liners.
  3. Spray the muffin liners with non stick spray to ensure the batter doesn’t stick to the sides.
  4. In a medium sized bowl, add together almond flour, monk fruit, and ¼ cup melted  unsalted butter. Mix lightly together with a fork.

  • Set aside ¼ cup of the mixture, this will be used for the crumb topping.
  • Beat or whisk together 2 large eggs in a small bowl, set aside.
  • Taking the remaining muffin mixture add in ½ cup melted butter, cinnamon, baking powder, vanilla extract, and beaten eggs. If your melted butter is still warm put the eggs in slowly mixing in a little at a time.
  • Mix well with hand mixer for a few seconds, you don’t want to over mix the batter.
  • Fill the muffin tin about half way up with the batter. I used a small/medium sized ice cream scooper to make sure the muffins cook evenly.
  • Then, crush up 1 bag of Better Than Good Snacks salted caramel flavored protein puffs. You can you a rolling pin to get a nice fine texture.
  • Add the crushed protein puffs to the crumb top mixture you had set aside from before.
  • Now, with you fingers evenly sprinkle the crumb mixture over the tops of the muffins.
  • Bake for 22 minutes or until lightly golden brown.
  • Finally, enjoy!
  • Alternatives:

    In case of nut allergies or dietary restrictions:  the almond flour can be substituted for other keto friendly flours.
